Curried Chicken and Brown Rice

Well, there is officially a blizzard going on outside and I can't sleep from all of the noise that the frats across the street are making. So I thought I would post what I made for dinner tonight. :) This recipe is nice and savory so make sure you have something nice and sweet for dessert!

What You Will Need:
- 2-3 boneless skinless chicken breasts
- garlic salt
- 3 cloves of garlic minced
- 1 small onion chopped
- 1 can of coconut milk
- 1/2 cup of chopped fresh cilantro
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp curry powder
Directions:
- Trim chicken and cut into small cubes. Drain of all juice and pat dry, then coat chicken in a small amount of garlic salt.
- In large skillet, brown chicken and then set aside.
- In same skillet, add minced garlic and chopped onion and saute for about 1-3 minutes or until onions are soft and golden.
- Add coconut milk, salt, pepper, cilantro and curry powder and stir. Bring to a boil and then add chicken and reduce heat to simmer for about 5 minutes.
- Serve with about 3 cups of brown rice :)
