Curried Chicken and Brown Rice

    Well, there is officially a blizzard going on outside and I can't sleep from all of the noise that the frats across the street are making.  So I thought I would post what I made for dinner tonight. :)  This recipe is nice and savory so make sure you have something nice and sweet for dessert!
    Serves: 2 really hungry people

What You Will Need:
    
  • 2-3 boneless skinless chicken breasts
  • garlic salt
  • 3 cloves of garlic minced
  • 1 small onion chopped
  • 1 can of coconut milk
  • 1/2 cup of chopped fresh cilantro
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp curry powder

Directions:
    

  1. Trim chicken and cut into small cubes.  Drain of all juice and pat dry, then coat chicken in a small amount of garlic salt.
  2. In large skillet, brown chicken and then set aside. 
  3. In same skillet, add minced garlic and chopped onion and saute for about 1-3 minutes or until onions are soft and golden.
  4. Add coconut milk, salt, pepper, cilantro and curry powder and stir.  Bring to a boil and then add chicken and reduce heat to simmer for about 5 minutes.
  5. Serve with about 3 cups of brown rice :)
 

Sweet Tooth Chicken and Peas

    My guy is pretty hard to please, so when it comes to cooking, I have to be a little creative.  In fact, he actually has a list of things that he is willing to eat (since there are so many things that he doesn't like) to help me out :/    The only problem is that the list is so short.  Pretty much just chicken, sugar, cereal, ice cream, and poptarts.  Oh Lord.
    However, he is willing to try new creations (with much prodding and a lot of dirty looks)  and most have made it to the list :)
